Easy to make and great for prepping in advance and simply popping in the oven on the day you need it. You can replace the chicken with the same weight of Quorn or Turkey and this recipe. makes 1 portion! if possible use the tear mozzarella not the grated, it keeps its place better.

Ingredients
200gLean Chicken Breast
1ZestFresh Lemon
3Asparagus Spears
0.5TeaspoonGarlic Powder
0.5TeaspoonPaprika
50gMozzarella Cheese
Instructions
Preheat your oven to 180 degrees C. Zest your lemon.
In a bowl mix together your paprika and garlic powder, add some salt and black pepper
Now butterfly your chicken breast, taking care NOT to cut all the way through and sprinkle your lemon zest over it.
Lay your mozzarella and asparagus in the middle...
Then fold up and secure with a cocktail stick as per the image
Now sit this in a 'boat' of silver foil (to catch any escaping cheese) and then cover the breast with your paprika and garlic mix.
Bake in the oven, uncovered for 25-30 minutes until the chickens juices run clear
Serve and enjoy, oh and you can drizzle with some of the fresh lemon juice if you like!
