Chicken, Smoked Bacon & Potato Stew

Throw it all together and let it cook. This is a quick, easy, full flavoured dish and makes 3 portions.

Equipment

  • Preferably a Slow Cooker

Ingredients

  • 400 g Lean Chicken Breast
  • 100 g Smoked Streaky Bacon
  • 400 g New Potatoes
  • 1 Large Brown Onion
  • 2 Dessertspoon Flour
  • 187 ml White Wine
  • 1 Dessertspoon Dried Thyme
  • 1 Dessertspoon Dried Tarragon
  • 2 Dessertspoon Lemon Juice Squeezy is fine
  • 200 ml Fresh Water
  • 2 Chicken Stock Cubes
  • 2 Dessertspoon Single Cream This is optional

Instructions

  • Chop your chicken (not too small) and chop your bacon (again not too small). Chop or slice your onion. Unless your potatoes are really quite small, cut each of them in half too (keep them raw)
  • Throw everything into your slow cooker, stir well.
  • Lid on, cook for 5 hours on low - Start 5 Hour Timer - When done, you can add 2 dessertspoons of cream if you wish to to 'finish' the sauce.
  • Serve into 3 portions and enjoy. Unused portions will freeze beautifully.

Notes

  • You can cook this in an oven at 150 Degrees instead of a slow cooker for 2 hours but check the potatoes are cooked before serving.
  • You can replace the chicken with Quorn or Turkey of equal weights.
