Coronation Pitta

This is a full flavoured big boy. This recipe makes ONE portion and you do not serve vegetables with it, however you may of course add additional salad! You can replace the Creme Fraiche with Greek Yoghurt and may use either Raisins or Sultanas.

Ingredients

  • 1 Pitta Bread
  • 100 g Cooked Chicken Breast
  • 50 g Cooked Coldwater Prawns
  • 0.5 Teaspoon Curry Powder
  • 1 Teaspoon Mayonnaise
  • 1 Teaspoon Half Fat Creme Fraiche
  • 1 Teaspoon Mango Chutney
  • 1 Dessertspoon Raisins
  • 0.5 Teaspoon Dried Coriander Leaf

Instructions

  • Slice your pitta bread open, to form a pocket.
  • Mix all the remaining ingredients together in a bowl
  • ...and stir through.
  • Place a little salad into your pitta, your choice...
  • then stuff with your filling and enjoy!

Notes

  • You may use either Half Fat Creme Fraiche or Greek Yoghurt (low fat or full fat)
  • You may use Raisins or Sultana
  • You may use white or wholemeal pittas.
