Eggy Chicken

A simple dish that is full of flavour and will go with salad or veg easily. This recipe makes 1 portion and you can replace the chicken with Quorn or Turkey of equal weight. The flavour of oxo cube you use will depend on the protein source you choose to use. All the teaspoon measurements are HEAPED teaspoons.

Ingredients

  • 200 g Lean Chicken Breast
  • 1 Teaspoon Flour
  • 1 Teaspoon Paprika
  • 1 Teaspoon Garlic Powder
  • 1 Teaspoon Dried Sage
  • Spray Oil
  • 1 Oxo Cube
  • 1 Medium Eggs

Instructions

  • Gather all of your ingredients together...
  • In a cereal bowl mix together your flour, garlic powder, sage, oxo cube (crumbled), and paprika. Season with plenty of salt and pepper.
  • In another cereal bowl break in your egg and mix with a fork until fully beaten.
  • Now take your breast and slice it lengthways, carefully, so that you have 2 or 3 thinner slices of meat.
  • Finally for the prep, place your 2 bowls and sliced meat and the griddle or frying pan you plan to cook with all in close proximity of each other, ready to go!
  • Spray your pan with some spray oil, around 20 squirts and turn the heat up high. Now pick up one of the chicken pieces, place into the flour mix and coat on both sides...
  • Then dip the same piece into the egg, make sure it is covered all round and then left out and allow to drip for a couple of seconds...
  • Then pop into the pan, and repeat for your other pieces...
  • cook for 3-4 minutes on each side (you may have to turn the heat down to half if it is starting to colour too much).....
  • Carefully lift the meat out and serve! Enjoy!
