Orange Paté Chicken

Easy to make and so much flavour its awesome. The orange works incredibly well with the chicken and you can of course replace the chicken with turkey or Quorn of an equal weight. This recipe makes ONE PORTION

Ingredients

  • 150 g Lean Chicken Breast
  • 50 g Paté
  • 2 Mushrooms
  • 2 Rasher Thin Sliced Bacon (12 in a pack)
  • 1 Fresh Orange
  • 1 Teaspoon Dried Thyme

Instructions

  • Preheat your oven to 180n degrees C. Chop your mushrooms up quite small.
  • pop some spray oil in a pan and add your mushrooms, cook them on a high heat for around 2 minutes...
  • Take off the heat, add your paté and dried thyme, stir through well.
  • Now place your two rashers of bacon in an ovenproof dish and lay your chicken breast on top. Make a large slit in it lengthways (not all the way through) and stuff all your pate mixture into it and then close the top part of the chicken back over it.
  • At this point, if you are using mandarin segments you can jump to step 7 if not, use a sharp knife and top and tail the orange, then slice all of your skin off your orange so there is no pith left
  • Then carefully generate some orange segments by slicing either side of each pith layer, you need 5 or 6 segments.
  • Lay 2 segments on top of your chicken...
  • then wrap your bacon over, and if you have them use 2 cocktail sticks to hold the bacon in place, but not essential.
  • Bake in the oven, uncovered, for 30-35 minutes until the chicken is cooked.
  • Remove and serve. Enjoy!

Notes

You can use any Paté you like. if you don't want to fiddle with a fresh orange you can use tinned or potted mandarin segments.
