
Spring Onion Chilli Bake
Simple to make and with loads of flavour. This recipe makes FOUR portions and is great for families (and freezing). You can replace the mince with equivalent weights of Quorn or Turkey Mince. The mince wants to be 5% fat or less.

Ingredients
- 500 g Lean Steak Mince (5% fat max)
- 1 Brown Onion
- 2 Cloves Fresh Garlic
- 8 Heads Spring Onions
- 1 Red Pepper
- 2 Teaspoon Ground Cumin
- 2 Teaspoon Ground Coriander
- 1 Teaspoon Chilli Powder
- 400 g Chopped Tomatoes
- 100 g Cheddar Cheese
- 1 Dessertspoon Oil
- 2 Dessertspoon Tomato Puree
Instructions
- Preheat your oven to 180 degrees C. Chop your onion, garlic and red pepper. Slice your spring onions. reserve some of the green part for garnishing at the end.
- Add your oil to a large pan, heat for 30 seconds then add your garlic, spring onions and brown onion. Cook for 2 minutes, stirring regularly.
- Now add your mince, stir through and cook for 3-4 minutes until done.
- Now add your red pepper, chilli powder, coriander, cumin and tomato puree.
- Stir through and cook, stirring continuously for 1 minute. Then add your chopped toms and stir through.
- Bring to the boil, season with salt and pepper and then transfer to an ovenproof dish, Sprinkle your grated cheese over the top and garnish with the remaining spring onion bits.
- Bake in the oven, uncovered for 20 minutes until golden
- Serve and enjoy
