Cheesy Autumn Mushrooms

A warming, cheesy, full flavoured dish thats quick and simple to make. You can use any cheese you wish (same weights) but the mix I have put below works best, although Stilton is as good as Gorgonzola. You can also swap the walnuts out for any other nut but again, they work best! This recipe makes 1 portion and is amazing hot OR cold!

Ingredients

  • 2 Flat Mushrooms
  • 50 g Gorgonzola Cheese
  • 15 g Walnuts
  • 1 Teaspoon Dried Thyme
  • 15 g Butter

Instructions

  • Preheat your oven to 180 degrees C. Grate or crumble your cheese.
  • Place your mushrooms in an ovenproof dish (leave the stalks in) and sprinkle on your walnuts.
  • Now top with your cheese
  • Sprinkle with thyme over each and then put half the butter on top of each one
  • Bake in the oven for around 10 minutes until the cheese is melted and the mushrooms have softened. Don't do much longer than this or the mushrooms will lose all of their juice. Remove and either serve hot or allow to cool and enjoy on the go!
