
Mustard Stuffed Chicken
Full of flavour and simple to make, you can replace the chicken with equal weights of turkey or quorn and this recipe makes one portion. You can use any mustard you like.

Ingredients
- 150 g Lean Chicken Breast
- 2 Rasher Thin Sliced Bacon (12 in a pack)
- 20 g Cheddar Cheese
- 20 g Mozzarella Cheese
- 1 Teaspoon Mustard
Instructions
- Pre heat your oven to 180 degrees C. Grate your cheddar cheese.
- In a bowl mix together your 2 cheeses and mustard, season with salt and pepper.
- Lay your two rashers of bacon out on your chopping board, place your chicken on top. Slice your chicken as if you were going to butterfly it but don't cut all the way through. You want to create a little pocket. Stuff this pocket with the cheese mix.
- Now wrap the bacon tightly around the chicken and place it onto your ovenproof dish. Season with salt and pepper.
- Bake in the oven for 25-30 minutes until the juices of the chicken run clear.
- Serve and enjoy!
